Feel Good Friday
You may have noticed that I haven’t quite been keeping up my five days per week posting schedule which I managed to maintain for a while. I have had so much fun writing this blog, and it has kept me sane while I have been waiting to start my new job.
I absolutely intend to keep writing very frequently, but with work starting on Monday of next week, I have started to realize just how many different things I need to think about and prepare, and time has really gotten away from me. I think this will probably continue to be the case for at least the next few weeks, while I adjust to a new job, a long commute followed by a move and a new city, and several other exciting things which are coming up, which will also take some preparation. So…my new goal is to post about three times per week, give or take a post here or there, depending on what I can manage during any given week.
I hope you won’t stop checking for new posts since they may be slightly less reliable. And I’ve said it before, but I’ll say it again. As much as I like writing, it is having YOU read my blog and/or comment on it which makes it exciting for me. So thank you all again for reading during these past few months. It has meant a lot to me. Here’s to new, exciting adventures ahead, which I hope you will join me for!
Anyway, it is Feel Good Friday… That means it is time for me to tell you about some things I’ve really enjoyed/discovered/am excited about this week.
Feel Good News – Ben and I have found a flat to rent! I haven’t said very much about this on the blog, but for me, it has been a humbling experience not having our own place. The past year has been so much fun, and so important in terms of figuring out what we both wanted from our long-term careers, but I am really excited to have a space that is completely our own again. And I love the area where we will be living. Because this is public blog, I can’t tell you exactly where it is, but I can tell you that it is right on the edge of the Peak District, so it will be wonderful for weekend walks and outdoor exploring. And, although the flat is small, it is in a gorgeous old building which has been modernized, and we have access to a gym which is right next door to the apartments. Yippee!
Here is a picture I took on a drive over the peak district last Saturday (almost a week ago). When we went back over the peaks on Wednesday to look at this particular flat, the snow was all gone, the ice had melted, and we were surrounded by blue skies and sunshine. It looked like two totally different seasons, but both were beautiful!
Feel Good Food - I just posted this recipe yesterday, but I absolutely loved it, and I can’t wait to make it again soon! If you haven’t seen it yet, please check out my Portobello mushrooms with grains, greens, and balsamic tahini dressing. They look and sound fancy, but they are incredibly easy to make, and they are delicious!
Feel Good Dessert – Unfortunately, this isn’t something I have made this week, but it is something I am craving! You can find the recipe for these delicious vegan chewy chocolate chip cookies here.
Feel Good Picture – I have mentioned my friend Mariann a few times, as Ben and I visited Mariann and Lars Erik and their daughter in Norway soon after I started this blog, and also because Mariann also writes a wonderful food blog with gorgeous food displays. I initially met Mariann and Lars Erik in 2005 when we were all studying abroad in New Zealand, and I feel very lucky that we have all managed to keep in touch. Today is Mariann’s birthday, so I dug up this old picture from our time in New Zealand – Mariann (on the right) had baked this cake for two other friends, and we were about to head into their apartment. You can see how creative Mariann is as a cook just from this cake – and you can guess how delicious her cooking is…Lars Erik is VERY excited about it! I seem to be concentrating very hard on helping to hold the cake, but I promise I was also excited.
