Chocolate peanut butter crunch bars
In case you haven’t eaten enough Christmas cookies yet, this recipe would be a very quick and easy addition to the holiday dessert spread! Since I can’t have any dairy products, I actually hadn’t had any Christmas treats yet, and I think I ate nearly half of the pan myself last night after making them.

Chocolate peanut butter crunch bars
Adapted from a friend’s recipe, and that friend supposedly adapted the recipe from a Rice Krispies recipe (but I can’t track it down online)
Ingredients
8 c. rice krispies (or generic brand)
1 c. peanut butter
1 c. light corn syrup
3/4 c. sugar
3/4 c. non-dairy chocolate chips (some semi-sweet chocolate chips are okay but check carefully for milk ingredients)
Directions
Pour the rice krispies into a large bowl. In a separate microwave-proof bowl, combine the sugar, corn syrup, and peanut butter. Heat in the microwave until melted, then combine with the rice krispies and mix together. Pour the mixture into an oven-proof dish (or two small ones). Melt the chocolate, then smooth the chocolate over the top. Allow to harden for ten or fifteen minutes, then cut into pieces and enjoy!
